Baked Alaska

  
I took one picture of the Baked Alaska and I must've deleted it :( So sad!!!! This is kind of what baked alaska looks like!!!
I actually attempted to make Baked Alaska  this year for Daniel's birthday!!! It's his special birthday cake he has EVERY year.  I tried!!! That's what counts :-) I didn't think it came out too bad!! I didn't have time to make it completely right, with a chiffon cake.  Maybe next year.  Caleb can help!!  I made the baked Alaska with a white cake and cookies and cream ice cream (his favorite).   Maybe next year I'll remember to take a picture of it :-P

Light Project

This house if very hard to light!!! It has open beams, so that means there is almost no lighting in the ceiling!!! We decided that we needed to have ceiling lighting at least in the dining room.  Thanks to our friends the Rohrbachers, we had 4 hanging lights that go with the decor in the house.  It took quite some time and a lot of thinking, but after a few weeks the lights are now up!!!! It makes such a difference in the house to have ceiling lights in one room!!  Because the lights are so spread apart, I decided to make a ball jar to hang in the middle of the lights.  I think ball jars are so useful!!! I use them in my pantry also.




Where'd My Baby Go?

I can't believe how grown up Caleb looks in this outfit!! He's a little boy!!



Bacon


I did not enjoy whenever I need to put bacon in a recipe.  I'm not a huge fan of the taste. But what I really don't like about bacon, is the humungous mess it makes when you have to fry it up!! There's an easier way to cook bacon!!!! This is my mom's idea. She bakes it in the oven!!!!!! So easy!!!! No grease everywhere!!! I don't dread when I find bacon in a recipe anymore.  I just put aluminum foil on a cookie sheet, turn the oven onto 350 and bake it for about 20 min.  I do sometimes move the bacon around that way it's baked evenly!!

Visit with Nana

Yesterday, we met Nana half way for a little visit!! She brought Caleb his Easter basket from her and Pada.  Caleb can't wait til he eats real food so he can try out his new food!




Happy Birthday Daniel

Daniel's birthday was on Tuesday. Caleb and I celebrated it with him over the weekend.  We both love Daniel so much!!! Caleb is a different boy when his Dad walks through the door.  He loves to tell Daniel how his day was, he gives him big smiles and sometimes he even gives juicy drool filled kisses!!!!



Yummy Meal

I made twice baked potato casserole and Parmesan chicken for supper the other night.  It was very yummy. Definitely on the "make again" list!!

5 Months

5 months

I can't believe 5 months have gone by since we first met Caleb!! What a sweet boy he is! We treasure every moment with him.  He's growing up so fast.

St. Patrick's Day was on Sunday. We had a wonderful day at church all day!!! On Monday night we went over Daniel's parent's home for corned beef and cabbage. It was a wonderful meal.

Out for a Morning Stroll

I'm working on getting back into shape.  We went out this morning to walk/run with my friend Ashley.  I can't wait to get back to running full time again!!! I want to run some races this summer.

When we put an offer on this home back in July, we knew we would have time to prepare for winter (if we had moved in right away). Well, the Lord had other plans for us and we didn't move in til the middle of December.  The man that lived here previously didn't have any wood prepared for us.  About once a week a week, Daniel has to drag out logs from the woods, cut the logs up, split them and I stack them. Let me tell you, it's quite a work out! This Saturday we cut, split, and stacked wood for most of the morning.  We shouldn't have to do it for a couple weeks now.  We can't wait for the warmer weather!! This summer we will make the time to prepare for next winter, so we don't have to go through this next year.

Sweet and Sour Beef Stew

Tonight we are having Sweet and Sour Beef Stew.  It is one of my favorite recipes. It's very easy.  I can make it early in the day and then put it in the oven 1 hour and 45 min before it's time to eat.  We both enjoy it!!  As you can see, I made butterscotch oatmeal cookies today also.  They are Daniel's favorite cookies. :-)

I didn't have time to post much last week, but I have to share this recipe with you. It was absolutely amazing and you can do so much with it. I enjoyed the chicken on a wrap and put some rice in it.
